Introduction
From the cucurbitaceae family, like the melon, the pumpkin is a voluminous vegetable, with a thick rind, pulpy meat dotted with seeds, traditionally spherical and orange in hue, all of which exist in infinity of shapes and colors among its different varieties. .
Origin
The pumpkin is native to hot countries and therefore is demanding in terms of temperatures. A few centuries ago, the pumpkin was grown only in Central America, from where it came to Europe to start being cultivated by small and large farmers. In Spain, most of its cultivation is centered in the Valencian Community and in Malaga. In Spain, pumpkins are available throughout the year.
Properties
Pumpkin consumption stimulates digestion and detoxifies the intestine, unloads the pancreas, helps reduce fat deposits, has a diuretic action that relieves kidney and prostate processes, strengthens the immune system, has a sedative effect, and also provides vitamins to the organism. Pumpkin is indicated for urinary inflammation, kidney failure, hemorrhoids, dyspepsia, dysentery, constipation, heart conditions, insomnia and diabetes. On the other hand, pumpkin seeds are packed with nucleic acids, nature's rejuvenators. These protein-like molecules rejuvenate and repair the body's cells and allow for healthy growth.
Consumption
Despite the fact that the pumpkin lends itself to different stews and its pulp is a softener in the company of other more consistent and rough vegetables, its culinary usefulness is ancillary in different types of regional stews, and especially in the classic "cocido madrileño" or a typical stew from the region of Madrid. Pumpkin meat is consumed cooked as a vegetable, boiled, fried, au gratin, accompanied by sauces and as a garnish for various dishes. However, its meat is somewhat tasteless, so it is usually seasoned with aromatic herbs. Winter varieties are widely used in confectionery.
Conservation
The pumpkin can be kept for months in a cool and ventilated place, but keep in mind that once cut, it will not last more than three or four days in the fridge.
