Introduction
The raspberry is a fruit that belongs to the popularly known group of forest fruits (berries). Its consumption is widespread throughout Central Europe since the raspberry is highly appreciated for its delicate and particular flavor. It is formed by small grouped drupes, it has a round and conical shape and the approximate size of a strawberry; the skin is smooth, carmine red.
Origin
The variety most consumed today, of European origin, was already known and appreciated gastronomically in ancient Greece, from where it passed to Rome, and from there it spread to the rest of Europe. Currently, its production focuses mainly on England, France, Germany, some countries in northern and eastern Europe, some North American states, and southern Spain.
Properties
Of the raspberry, it is necessary to emphasize the multiple vitamin contents that it offers, similar to those of citrus fruits. It contains the vitamin B and C complex in very high amounts, and has a high content of carbohydrates, mineral salts, iron, magnesium and calcium. It is proven that raspberry exerts a beneficial action on the nervous system, and it is highly recommended to introduce it in the diet of children and in that of people subjected to intense intellectual work.
Consumption
Raspberries are mainly consumed raw, a state in which their exquisite organoleptic properties are best appreciated. They can be accompanied with cream, sugar, wine or spirits. Inside a fruit salad they will give a very special touch. The jam obtained from it, mixed with currant, is delicious and keeps for several months. The raspberry is also used for the manufacture of liqueurs and brandies.
Conservation
It is preferable not to handle the raspberries until the moment of eating them, and keep them at a low temperature in their original container. The raspberry is one of the few fruits that can be easily frozen, and it can be kept that way for several months.
