Introduction
Salsify is an edible root that belongs to the Compositae family. It is very long cylindrical in shape. It measures between 30 and 40 cm in length, and approximately 2 cm. thick. Generally, it has a dark brown color on the outside. Although the part that is attached to the stem has white and tender leaves that are consumed in salads due to its delicate flavor, it is above all the root that is used in culinary uses such as stews, which are very tasty. There are two main varieties: black salsify and white salsify.
Origin
Salsify has its origin in Asia and Europe. The main producing countries are Belgium and France.
Properties
Salsify provides protein, carbohydrates, fiber, calcium, iron, and vitamin C.
Consumption
Salsify is mainly consumed in stews, combined with vegetables and potatoes. It is an ideal accompaniment for meat dishes. Its flavor, slightly bitter, is always very aromatic.
Conservation
Salsify is kept in the refrigerator.
