Origin
The sweet potato, according to different sources, comes from America, specifically from Brazil and Ecuador. It is a very important crop, especially in tropical and subtropical areas. The continent that supplies the most sweet potato production in the world is Asia. In Europe, its production is scarce, being its largest producers Portugal, Spain, Italy and Greece. Its consumption in Spain experiences annual growth thanks to its demand in the industrial sector (confectionery, patisserie, etc…).
Properties
Due to its combination of nutrients and its richness in carbohydrates, the sweet potato is a regenerating food with a high energy value, even superior to that of the potato. It has a high concentration of vitamin A, and at the same time a large proportion of vitamin I, C and folic acid. The flavor of its pulp is sweet due to its sugar content, very suitable for roasts, purees, cakes, soufflés and stuffing. The sweet potato has a texture similar to that of the potato and has different culinary applications, everything and that its most traditional form of consumption is roasted or boiled, with butter or sugar; The sweet potato is highly appreciated in the pastry industry since it is widely used for the preparation of cakes and jams, as well as for preserves.
Conservation
The sweet potatoes, once at home, must be stored in a cool, dry, dark and ventilated place, without wrapping, and thus be able to keep for several days.
