Its pulp is always juicy and refreshing, in some varieties it is white, compact and very sweet, and in others it is yellow. There are numerous varieties of early and late peaches, including the following: Spring Crest, May Crest, Springtime, Caterin, Elegant Lady, Babygold, Merryl, Sudanell, Roig Piñana and Amarilla de Calanda.
