Introduction
It is a legume characterized by a tender and fleshy pod, so it is consumed whole, pod and seeds at the same time. It is sweeter than the pea as it contains more sugars.
Origin
It is native to Asia, although now its cultivation has spread throughout the Mediterranean.
Properties
They stand out for their high content of vegetable proteins, vitamins and minerals, as well as being an important source of fiber, thus facilitating good gastrointestinal transit. They are rich in zinc, potassium, iron, calcium and magnesium, as well as vitamins, especially A, which is beneficial for sight and promotes tissue regeneration, C, which strengthens our immune system, and B, which favors the proper functioning of the nervous system.
Consumption
Once washed, it can be cooked, which must be brief to enjoy its crunchy texture, to later be sautéed with the ingredients that most appeal to us, or in stews, vegetable stews or as a garnish for meat and fish.
Conservation
It is convenient to consume the snow peas fresh, but it is also possible to keep them in the fridge for a few days.
