Introduction
The currant, from the Grossulariaceae family, offers 3 characteristic groups: white currant, red currant, and black currant. They grow in small clusters, like tiny grapes. The fruit is round, the size of a pea. The flesh, usually the same color as the skin, contains small edible seeds. Its flavor is acidic and lends itself perfectly to the decoration of various desserts, sauces, and jams.
Origin
Originally from Asia, currant is currently grown in several European countries. However, it is available year-round thanks to off-season imports, especially from Chile and Argentina.
Properties
Currant provides a high content of vitamin C, as well as calcium, iron, fiber, and protein.
Consumption
Raw, it is eaten for dessert like any other fruit, or mixed with cream. In addition, it can be mixed with yogurt, which will provide an exquisite perfume. The visual qualities of the currant allow its use to decorate ice cream, sauces, etc.
Conservation
