Introduction
The Pitahaya, or Hylocereus Triangularis, is a refreshing and aromatic exotic fruit. It is the fruit of a humid climate cactus. The yellow pitahaya is oval in shape and measures about 12 cm. This variety, the Cereus Triangularis Haw, has a deep yellow skin, similar to a tropical pineapple. The pulp, which contains small edible seeds, is white and shiny. There is also the variety of red pitahaya, which has smooth carmine-colored skin and violet pulp. It is a very showy fruit that is pleasant both to the palate and to the eye. Pitahayas are in the market all year round.
Origin
The pitahaya is native to the Andean countries of tropical America, more specifically from Colombia and Ecuador. The red pitahaya is also cultivated in countries with a humid climate in tropical Asia. Its commercial development in Europe is very recent.
