Introduction
In spite of the fact that in Spanish is called Mushroom Pumpkin, it is commonly known as Cep. It is the quintessential mushroom. Very similar to Boletus aestivalis and Boletus aereus. It is usually found in pine forests. Its viscous hat measures between 7 and 20 cm in diameter, and its color is very characteristic, being initially white, but gradually acquiring a dark hue, between brown and black. Its meat is white, and has an odor and flavor reminiscent of walnuts. It appears in the summer and autumn seasons.
Origin
Already in ancient Greece numerous species of mushrooms were collected for culinary use. The Romans were also very knowledgeable about its properties, not only nutritional, but also medicinal. It was not until the 17th century that the French began the controlled cultivation of some of them, which has evolved to the present day, in which modern cultivation systems are used. It is marketed fresh in the autumn season, but it is also widely marketed dry.
Properties
It has a very low caloric value, 20 kcal per 100 gr. so they are ideal to incorporate into a hypocaloric diet. In addition to containing minerals such as iodine, potassium or phosphorus, it has a significant amount of vitamin B.
Consumption
Its excellent flavor and delicate texture make this mushroom one of the most appreciated for consumption. It is usually used both cooked, either as the main element by itself, in scrambled eggs, as a filling for meat and fish stews, or as a garnish in rice, pasta or vegetable dishes. Before cooking, and in order to achieve a milder flavor, you can add lemon juice.
Conservation
It can be preserved in different formats, either dried, in vinegar, in oil (for large ones), in salt, frozen, in brine or in powder.
