Introduction
The date, fruit of the palm tree, hangs from this tree in the form of large clusters. It belongs to the palm family. It is oval and elongated and measures between 4 and 8 cm. When ripe, its color is yellowish or brownish, depending on the variety. Its shiny skin covers a pale pulp with a bone inside. Until recently, the date was only known as a dried fruit that was found on the market during the winter months; but from the 1970s, fresh dates began to be introduced, subjected to a conservation process.
Origin
The Date is native to the warm areas of North Africa and Mesopotamia. The main producing and exporting countries of dates are: Iraq, Israel, Egypt, Arabia, Algeria, Pakistan and Morocco. In Spain they are also grown in the province of Alicante.
Properties
Dates need to be stored in a cool, dry place to keep them ready to eat. Some very meaty varieties such as Medjoul can be kept frozen for a long time.
Consumption
Directly fresh, it must be perfectly ripe for consumption. It is necessary to highlight the various forms of presentation of the date: the date bread - a staple food in its area of origin -, the date honey, or the syrup that is made with some varieties, and with a lot of sugar or liquor. Oil and a roasted coffee substitute are extracted from its bones. This fruit is also used in salads, cooked dishes and yogurts.
Conservation
