Introduction
It is an elongated tuber that is reminiscent of the sweet potato, but with a harder and more irregular rind. Its interior is whitish.
Origin
Native to warm and humid areas, it has been cultivated for thousands of years, especially in Africa and Asia, but also, for example, in the Canary Islands.
Properties
It is a highly energetic food, with a satiating effect. It contains a high content of potassium, necessary for the proper functioning of the nervous system, and fiber, which helps regulate intestinal transit.
It also contains antioxidants that help fight cell aging and vitamin B, which regulates the circulatory system.
Consumption
Like the potato, it can be boiled, fried or baked.
Conservation
They must be kept in a place away from moisture and any source of heat.
If you want to keep them for longer, once peeled, you should cut them into small pieces and store them in a container in the fridge.
